Did you know that you can FREEZE cakes and cupcakes and take them out of the freezer when you are ready to decorate and eat them? My mind was blown when I figured this out. As a baker this is the biggest time saver for me. Before I go on and explain how to properly freeze your bakes, I was skeptical that freezing cakes would cause them to not taste as good as a freshly baked one. I was wrong. I have experimented at home and my boys have asssured me that the cakes taste just as fantastic as when I baked them.
Time Saving TipSay your child has a birthday party towards the end of the month. With school starting and sports you know that there is no time to bake cupcakes or a cake around their birthday. At the beginning of the month, when you have more time, bake those cupcakes or cake. Freeze the cake/cupcakes and then 2 -3 days before you want to serve it, take it out of the freezer and place it into the fridge. Then a day or two before the event you can decorate the cake/cupcakes.

I have also heard of people baking, decorating and THEN freezing the cake. I have not tried this before, but if you are feeling adventuresome and want to try it out, please do and then let me know how the cake turned out.
