My mind was blown when I figured this out. As a baker this is the biggest time saver for me. Before I go on and explain how to properly freeze your bakes, I was skeptical that freezing cakes would cause them to not taste as good as a freshly baked one. I was wrong. I have experimented at home and my boys have asssured me that the cakes taste just as fantastic as when I baked them.
Time Saving TipSay your child has a birthday party towards the end of the month. With school starting and sports you know that there is no time to bake cupcakes or a cake around their birthday. At the beginning of the month, when you have more time, bake those cupcakes or cake. Freeze the cake/cupcakes and then 2 -3 days before you want to serve it, take it out of the freezer and place it into the fridge. Then a day or two before the event you can decorate the cake/cupcakes.
How to freeze cake:

After the cake has cooled from baking, take it out of the pan and wrap it in clear plastic wrap. I do a double layer of this to make sure the cake is good and covered and no air can get to it. Wrap each cake layer individually.

Then wrap the cake layer in aluminum foil.

If you want an extra layer of protection from freezer burn, place the layer of cake already wrapped in clear plastic wrap and foil and place it inside an extra large zip lock freezer bag.

Place each wrapped layer of cake into the freezer.

How to freeze cupcakes:

Take the cooled cupcakes out of the baking tray and place them into an airtight container, lid off.

Place plastic wrap ontop of the cupcakes.

Put the lid on the air tight container.

Place cupcakes in the freezer.

The cakes and cupcakes can stay in the freezer for up to 2 - 3 months. This means you could even make them 2 months ahead of time!
I have also heard of people baking, decorating and THEN freezing the cake. I have not tried this before, but if you are feeling adventuresome and want to try it out, please do and then let me know how the cake turned out.
